Breakfast puff pastry

A breakfast pastry ideal for Sunday mornings, with an essence of indulgence yet an ease in preparation.

It all begins with store bought puff pastry. I love buying prepared pastry and I don’t see anything wrong with it! All the work is done for you and you can get creative with fillings and toppings.

This breakfast pastry is inspired by a ham and cheese croissant. Though the two have similarities, they are different. The ham is placed on top of the pastry after it’s baked, keeping it cold. There is a warm layer of goats cheese inside the pastry to go alongside scrambled eggs and dill.

Makes 6 breakfast pastries.

Ingredients:

3 sheets puff pastry, from the frozen section in the supermarket

6 eggs, whisked, for the scramble + 1 egg, whisked, to paint the pastry

big pinch of salt and cracked black pepper

2 tbsp extra virgin olive oil

6 tbsp goats cheese, I used Meredith Dairy Goats Cheese Feta - highly recommend!

2 tbsp dill, chopped

3 tbsp ‘everything but the bagel’ seasoning

500g shaved ham, from the deli if possible!

1/4 cup grated parmesan block, to garnish

6 pickled guindilla peppers, to garnish

Method:

Preheat oven to 185C/365F.

Scramble the eggs: bring a fry pan to medium-high heat and add 2 tbsp olive oil. Crack 6 eggs into a mixing bowl, season with salt and pepper and whisk well. Once the pan is hot, pour the eggs in. Scramble lightly, remove from heat once the eggs are almost cooked through but not quite. Remove from heat and divide into 6 equal portions.

Prepare the pastry: slice a puff pastry sheet into four equal squares. Add 1 tbsp of goats cheese to the center of one pastry square. Mash lightly to spread, keeping 1 inch of each side of the pastry square empty. Place one portion of scrambled eggs on top of the goats cheese, keeping it centered. Sprinkle with 1 tsp dill. Take another pastry square and place directly on top of the square with fillings. Using a fork, press down on the sides to seal the edges together. Brush all over, lightly, with whisked egg. Sprinkle 1/2 tbsp ‘everything but the bagel’ seasoning over the pastry. Place on a parchment lined baking sheet while you prepare the others.

Bake the pastry: bake for 15-20 minutes, depending on your oven, remove from the oven once golden brown all over the top. Let cool for 5 minutes.

Assemble: place a warm baked pastry on a serving plate. Add a few slices of shaved ham over the top and grate parmesan over top (as much as your heart desires). Finish with one pickled pepper placed on top. Enjoy straight away!
