Strawberry hot sauce

For the lovers of strawberry and hot sauce! <3

I love making hot sauce in this way, just by blending my veggies (and fruits I guess) until smooth and adding some oil to thicken. It’s super fresh that way and the notes of strawberry and chillies sing any way you enjoy it.

I had dreamt up having oysters with strawberry hot sauce but I use it anytime I would want hot sauce. It’s surprisingly versatile!! :)

You can make this less or more spicy as you wish. If you like less heat, reduce the amount of habaneros and substitute with more of the mild chillies you’re using (in my case that was cayenne). If you want more heat, use all habanero. The way I choose which chillies to use is all about balancing the heat level of the hot sauce, so I opt for half the total quantity of chillies to be spicy (habanero) and half mild (cayenne).

If you can’t find fresh cayenne chillies, or habaneros, substitute with another mild chilli for cayenne and another spicy chilli for habanero. Though most hot sauces are made with cayenne as the base so it shouldn’t be too hard to find!

Ingredients:

500g strawberries, tops removed

3 habanero chillies, deseeded

3 cayenne chillies, or another mild chilli, deseeded

1 carrot, rough chop

1 white onion, quartered

3 cloves garlic, smashed

1/2 cup white vinegar

1/4 cup agave syrup

1 lime

pinch of salt

50g olive oil, or neutral oil

Method:

Blend: add the following ingredients to a high-speed blender: strawberries, chillies, onion, carrot, garlic, vinegar, agave syrup, the juice of a lime and a generous pinch of salt. Blend until completely smooth.

Taste and adjust for salt, acidity, heat. You can add another chilli or more sugar if it’s not the right heat for you.

Emulsify: once you’re happy with the flavor, slowly pour in the oil a few drops at a time while on medium speed, using the blender or a stick blender. Adding the oil in slowly while blending will incorporate the oil and air into the mixture, giving it more lift and body.

Transfer to a container and store in the fridge. Enjoy on anything you would normally have hot sauce on. <3
