Whipped feta with charred leeks dip

Ingredients:

1 leek, white part sliced into rounds

250g feta

1/2 cup grated Parmesan

juice of 1/2 a lemon

1 garlic clove, grated

1 tbsp olive oil + 2 tsp olive oil (separated)

1/4 tsp garlic powder

Salt and pepper

Method:

Toss the leek rounds in 2 tsp olive oil, garlic powder, salt and pepper.

Using your oven or air fryer on the grill setting (or an actual grill) grill the leek rounds at 230C for 10 minutes on each side.

Let cool and remove the outer charred edges. The leeks remaining should be soft and plump.

Blend leeks with 1 tbsp olive oil, lemon juice, garlic, a heavy pinch of salt and pepper until smooth or desired texture. I like mine to be a little textured with pieces of leek peeking through.

Then, add feta, Parmesan and water if needed. I added 2 tbsp of water to thin, but please only do this if your dip really needs it.

Taste for more salt.

Garnish with spices, herbs, olive oil and lemon zest.
